Pasabor: Try these awesome Birria Tacos in Bacolod City!

If you’re looking for Birria Tacos – try out Pasabor – a take out and delivery place in Bacolod City, Negros Occidental, Philippines that serves Mexican style Birria Tacos.

This is the first time we’ve ever heard of Birria Tacos so we did a little research to explain the tacos to you, our readers.

Birria is a meat stew traditionally made from goat meat, but occasionally made from beef or mutton. The dish is often served with corn tortillas, onion, cilantro and lime. The meat is marinated in an adobo made of vinegar, dried chiles, herbs, and spices before being cooked in a broth.

That description sounds very familiar to us in the Philippines! Adobong beef stew na nilaga! Sounds very tasty. We have a lot of beef based dishes in the Philippines and the closest we have to beef stew is the beef Pares.

So what are Birria Tacos? This is a new and trending internet dish which takes the stewed, shredded Birria beef and places it into a crispy taco shell. Plenty of cilantro, cheese and chopped white onion is then added.

Pasabor was the first restaurant in Bacolod City to serve birria tacos. It has three locations: one at Rockwell (along Circumferential Road), another at 10th Garnet street, City Heights, and its newest store on the fourth floor of Ayala Malls Capitol Central.

According to our two ‘Murican friends, who also tried the food, Pasabor comes pretty close to authentic mexican birria, with one even saying that they were the best tacos he’s ever had since he came to Bacolod. However, the lack of lime means that Pasabor had to use lemons which is not exactly authentic but the taste sort of comes close enough.

Dipping Sauce!

What makes this Birria Tacos really special is that you’re supposed to dip it in this sauce which is a consommé made with the broth used to cook the beef. Very nice and flavorful! Since the dipping bowl was too small, We opted to pour the broth all over the taco instead. Super good!

We also got Pasabor’s Taco de Adobada. It’s soft flour tacos with minced pork cooked with chili. It also comes with plenty of salsa sauce.

This is one of our favourite Tacos! The taco is so soft and delightful to eat. Very addicting especially as the tacos are freshly made!

The Salsa sauce is finely ground and pureed properly and actually spicy! Super tasty.

Pasabor also has their Masarap – a masa tortilla that’s like a sandwich. Super delicious and gooey with melted cheese!

The cheese and beef quesadilla is also somewhat similar to the masa wrap but thinner and flatter!

To get to their new location in Ayala Malls Capitol Central Bacolod, Take the elevator and turn right. Pasabor Ayala Malls is located near the central area on the fourth floor.

Overall, we are so surprised and impressed at the way the palates of People living in Bacolod have changed. There’s a lot of tasty international dishes that keep popping up in Bacolod City. Ten to fifteen years ago, people in Bacolod were xenophobic – afraid to try new things. Now, tastes have changed and we’re glad that Pasabor is one of the new and exciting places here in Bacolod City.

    hopefully that ‘murican friend’ of yours lived in California for over 50 years, regularly enjoyed good quality Mexican food at local spots as well as fine dining establishments, and has a sense of the basic flavor profile requisite for a true Mexican taco. Oh? He did> He does? Wonderful
