Rozo Bistro is Roy’s Hotel and Convention Center’s in house restaurant. It’s a charming restaurant that perfectly captures the modern Scandinavian minimalist style with its use of wood, emerald, and cream tones.
However, looks aren’t everything — it’s the food that matters, and we’re proud to say that the dishes at Rozo Bistro are awesome! Every dish we ordered was a winner, both in terms of taste and price.
Here’s what we ordered!
Appetizers:
Artichoke and Cheese Fondue: People from Bacolod love artichoke dip! This is a super popular appetizer and one of our favorites, so we decided to try Rozo Bistro’s Artichoke and Cheese Fondue. Rozo’s version contains three types of cheese – Camembert, Brie, and Mozzarella in a truffle cream. This appetizer is super tasty, and there are plenty of artichoke chunks in it too!
Squid Ink Calamares: We stumbled upon this appetizer while waiting for our orders to arrive. A neighboring table had ordered it, and we thought, “Hey, we want one of those,” without knowing what it was! This appetizer features deep-fried breaded Squid with Parmesan, served with a side of chips. It looked pretty unusual, and we soon found out why.
It comes with a SQUID INK DIP! If you enjoy squid and squid ink, this is a match made in heaven. The creamy dip has an irresistible flavor of squid and squid ink. To eat, place some calamari on a chip and spoon a little dip on top of it.
Mains:
Louisiana Seafood Creole: It’s a dish of clams, mussels, and shrimp in a rich, red prawn bisque sauce. The dish comes with an absolutely tasty slab of grilled marlin. It is served with plenty of lemon slices, so be sure to use them to drizzle over the entire dish for a delightful lemony taste. It pairs exceptionally well with rice. Just the marlin by itself is super tasty!
Grandma’s Ox Tongue: Ox tongue is a favorite dish among many Filipinos, and it is only served on special occasions. Rozo Bistro’s ox tongue is cooked until tender, served in a brown sauce with olives and mushrooms, accompanied by a side of mashed potatoes. This is peak comfort food!
Crispy Pork Chicharrones – Rozo Bistro presents a beautifully fried slab of pork belly with a skin so crisp and juicy that it made a loud cracking sound as we cut into it! It is served with a salsa guajillo sauce, a sauce made with dried Mexican peppers. Super good! A delicious highlight of our meal.
Pasta
Pasta Negra – This dish was an extremely pleasant surprise! We’re used to seeing Paella Negra in Bacolod restaurants, so when we saw that Rozo Bistro had a Pasta Negra, we jumped at the chance to try it!
You are served pasta with a nice, thick sauce of squid ink and sprinkled with Parmesan. The pasta comes with a lemon wedge, and you are supposed to drizzle the juice of the lemon on your pasta. Here’s the most important part – break open the poached egg and mix it with the pasta! It is SO GOOD! You will then have something like a pasta carbonara, only with squid ink.
Take note that you WILL have black lips and teeth from the ink. Also, be very careful not to get your clothes splashed with it.
Super good, and a super fun dish to try. We had fun showing each other our black lips and teeth!
Dessert
We capped that off with a slice of Belgian chocolate cake, with sea salt caramel, almond praline and raspberry coulis!
Now that the meal is over, it’s time to EXPLORE the hotel. Our friend John showed us around!
Roy’s Hotel and Convention Center is designed for functions, events, meetings, and conferences! It is not your typical “shallow” hotel that influencers stay in just for the “aesthetic.” This establishment is genuinely geared towards events and parties, and with just one look, we saw that it could fulfill several needs that most hotels in Bacolod could not!
The lobby maintains that minimalistic Scandinavian look but has furniture created by the famous designer Kenneth Cobonpue. The distinct designs on the chairs is both bold and stands out in the minimalist lobby.
You may be wondering why the lobby is so tiny? Well, the reason is that the other HALF of the lobby is the grand ballroom reception area – an area that is so big and pretty!
The two areas are respectively called Saffron 1 and 2. Saffron 2, shown here, can seat up to 200 pax banquet style. Saffron 1 can seat up to 150 pax, and when you allow them to combine by taking down the removable walls, you get the GRAND SAFFRON – an awesome ballroom that can seat up to 500 people.
Both ballrooms can be fully customized but only Saffron 1 has a special treat for guests who rent it – a HUGE LED WALL. Wedding Designers and event managers will LOVE the Grand Saffron as they also provide an electronic scissor lift for CEILING LENGTH designs and decorations!
What’s important to note is that you can customize every aspect of ALL the function rooms in Roys Hotel and Convention Center. These rooms can be set up concert, classroom or banquet style depending on what you need!
We left the Grand Saffron and went up to check out the other areas of the hotel
John took us to see the Lotus 1-2-3 rooms. We couldn’t help but make a joke about why they named their rooms after a word processor, but John told us that he wasn’t born when that word processor came out. Ouch. It really revealed our age and how old we are.
The Lotus 1-2-3 rooms are versatile spaces ideal for buffets and functions with a moderate number of guests. Each Lotus 1-2-3 room can accommodate 50 people, and when combined, they can host up to 180 people. Not bad! Each room is also customizable according to what you need. Everything is movable.
For meetings and intimate conferences, check out Roy’s Hotel and Convention Center’s Segundo and Sotera boardrooms. These meeting rooms come equipped with conference tables and chairs. The Segundo boardroom can accommodate 18-20 people while the Sotera boardroom can accommodate 10 pax.
Right beside these conference rooms are the Lily 1 and 2 Rooms. Each can accommodate fifty people, but when combined, they can seat 120 guests. The picture shows Lily 2 set up classroom style, while the other picture shows Lily 1 set up banquet style.
Fancy a drink? We also checked out the soon-to-open Linea Sky Bar—a beautiful rooftop bar with an incredible view of the Kanlaon Mountains!
Also on the rooftop, we discovered the beautiful Attico area. This space features villas and an area for intimate private parties.
While we can’t showcase much of the villas yet (top secret!), we can reveal that they boast a GORGEOUS view of the highway, the sunset and the Guimaras strait, and each villa comes with a JACUZZI!
Every room in the Attico Villas is furnished with mattresses, pillowcases, and bedsheets that remind us of the luxury Okada hotel in Manila. If you’ve been there, you know how SOFT and LUXURIOUS their beds are!
We requested to see more rooms and explored this charming Deluxe Queen room. The room is equipped with a refrigerator, kettle, ironing board, desk, safe, and hairdryer, and,a HUGE, SMART TV! Perfect for singles or couples travelling together.
For those who want something a little bit bigger, check out the Executive Twin room.
This room has 2 queen beds with a tub, a day bed and pool access – the room is right beside the pool!
Finally, we explored one of their BARKADA rooms, which turned out to be the most enjoyable for us! You might envision small and cramped beds when you think of a barkada room. However, Roy’s Hotel and Convention Center offers absolutely beautiful barkada rooms with plenty of space and it has large, double-decker beds (with a ladder in between).
The mattresses are comfy, and we can envision families or groups of friends renting this room for fun events. This room has 8 beds with provisions for more if desired!
This room is equipped with a refrigerator,TV, safe, ironing board, hairdryer, and, more importantly, TWO toilets and showers! How COOL is that! No queuing for hours for people to finish doing their business!
We loved every bit of our visit at Roy’s Hotel and Convention Center – it turned out to be a huge hotel tour but it was an enjoyable one! Go and visit them!
