Twilight, established in the 1970s, is a classic restaurant in Bacolod City named after the timeless platters song, “Twilight Time.” It is one of the oldest restaurants in the city and was founded by Eugenio Quilantang and Emilia Quilantang. Originally located beside the old University Club, in front of the plaza, the restaurant later moved to Rizal Street when the reclamation of the nearby sea began. Eventually, it settled in its current location at the corner of Manukan Country, Rizal – Father Ferrero Street.

Tita Daday, the current owner, is a friendly woman with captivating stories about the influential figures of Bacolod in the 1970s who used to arrive in their fancy cars and dine at Twilight.

During that time, the Bacolod Plaza held a prominent status as the go-to place, accompanied by the exclusive University Club. This members-only club strictly welcomed individuals with university degrees. Classical music bands performed in the grandstand of the public plaza, while people enjoyed leisurely walks along the ocean side or had coffee at the renowned Sea Breeze Hotel.

Twilight is renowned for its delicious native chicken inasal and beef liver barbecue, but the star of their menu is undeniably the Beef Pata. Made with only three main ingredients—Beef Pata, langka, and batwan—the soup has gained popularity among both the older generation and the younger crowd.

The restaurant takes pride in serving native chicken inasal, known for its superior taste and flavor compared to factory-farmed local chicken. Although slightly smaller, the unique and standout taste of native chicken requires minimal seasoning to enhance its natural goodness.

Another favorite dish at Twilight is the barbecued beef liver. Thin slices of beef liver are grilled with a special sauce, creating a delicious delicacy. Apart from its taste, beef liver is rich in iron and vitamin A, promoting healthy blood circulation and preventing anemia.

However, the most iconic item on the menu, which has remained unchanged for five decades, is the Beef Pata. This dish involves boiling the beef pata for hours until it reaches a soft and tender consistency, resulting in a thick, rich soup. According to Tita Daday, this is how their customers prefer it.
